POTATO MILLE-FEUILLES WITH RABBIT RAGÙ SAUCE AND GOLD (*)

- Potatoes
- Cream
- Milk
- Eggs
- Parmesan cheese
- sage
- Salt
- White wine
- Rabbit and chicken ragù sauce
Preparation

Peparation:
Sauce: brown the carrot, celery and onion. Place the cut chicken and rabbit and brown. Simmer with white wine and add the tomato. Cook for 2/3 hours.
Mille-feuilles: boil the potatoes. Cool, then add the eggs, milk, cream and parmesan cheese.
Bake in the oven for roughly 40/50 minutes.
Garnish with Gold Chef gold flakes.
